Gingerbread

Making gingerbread is a favourite Christmas tradition for our family. This gingerbread is delicious and pairs amazingly with some homemade eggnog.

  • 380g plain flour
  • 1 tbsp ground ginger
  • 1½ tsp cinnamon
  • ½ tsp ground cloves
  • ½ tsp nutmeg
  • 1 tsp bicarb soda
  • 140g butter
  • 100g rapadura sugar
  • 130g molasses
  • 1 tsp vanilla
  • 1 egg yolk
  • Pinch salt
  • Pre-heat oven to 180c/350f

Melt butter, add sugar, vanilla, molasses and yolk and blend well. Add dry ingredients and blend again until mixed thoroughly.

Place dough on lightly floured bench, shape into a ball, wrap in gladwrap and refrigerate for 30 minutes.

Place dough between two sheets of baking paper and roll out to 4mm thickness. Use cookie cutter to cut out biscuit shapes. Place shapes onto prepared baking trays and bake in oven for 10 minutes or until lightly golden. Allow to cool slightly before placing on a wire rack to cool completely. Decorate biscuits before storing in an airtight container.

A simple icing recipe is to mix one egg white with ½ to 1 cup icing sugar.
