Did you know that carrot greens are in fact quite nutritious! Have you ever noticed that parsley, celery and carrot greens all share a similar U shaped stem? This is because they are all in the same Apiaceae/Umbelliferae family of plants.
So what to do with your carrot Greens? Rather than adding to your compost or feeding to your animals, a great way to use them is to make pesto. This pesto is delicious and far cheaper and healthier than buying pesto at the shops.
We love pesto of any kind, and the great thing with pesto is that you can adjust all the ingredients to your taste buds. Love garlic? Then add more! Love some spice? Then add chilli flakes!
1 ½ cups carrot greens
80g parmesan
¼ cup cashews
3 cloves garlic
6 tbsp olive oil
Juice of ½ a lemon
Salt and pepper to taste
Wash carrot greens and cut off and discard the tough stems. Cut the greens roughly and pop into your thermomix/blender. Add all other ingredients and blitz until it all comes together. The great thing with pesto, is that you can adjust all ingredients to suit your taste or add spices such as chilli, cumin, etc.
